What are Boning Knives?

Boning knives are a must-have item for any self-respecting professional chef. They are sharp with a thin blade that is mainly used to remove bones from poultry, fish, and other meat. They are often up to 18cm long and are designed for their precision when removing the small fiddly bones in food preparation.

While they are used for their precise cutting skills, they do need to be hard-wearing. This means that their blade, while narrow, needs to be strong, so they can cut through tough meat with ease. They are often confused with filleting knives that are mainly used to remove the skin from bones.
